I have no idea what it is called, but the furry stuff in the middle of the papaya is delicious. It is by far the best part of the papaya. I used to take out the seeds with a spoon, which would cause the furry stuff to come out with the seeds. Big mistake! After observing my best friend, Kristina, cut a papaya and then gently slide the seeds out, I decided to start doing the same thing. It makes a huge difference! When you are done taking the seeds out, the pile of seeds should have little to no orange.
